Recipe: Homemade Krispy Kreme

Could you imagine having a Krispy Kreme donut at your fingertips? Well, now you can. Check out this recipe for Homemade Krispy Kreme donuts. Uh, oh. This could be dangerous. Warning: they are addicting! Turn your red “hot” light on, and get to making these scrumptious treats.

Homemade Krispy Kreme

Ingredients:

3 T milk

3 T boiling water

1 tsp dry active yeast

8oz all purpose flour (a little under 2 cups)

1 1/2 oz sugar (about 3 T)

1 egg

1 oz butter, cold to room temperature

dash of salt

Enough oil to cover the bottom few inches of a wok or deep fryer

Glaze

1/3 c butter

2 c powdered sugar

1 1/2 tsp vanilla

4 T hot water or as needed.

Directions: 

1. In a large measuring jug, combine the milk and boiling water. Add a teaspoon of the sugar and the yeast. Stir it gently, then leave it in a warm place for the yeast to activate (aka foam).

2. In a large mixing bowl, combine the flour, the rest of the sugar, and the salt. Cut in the butter using your fingers or a pastry blender, until it resembles crumbs.

3. Add the egg (give it a quick beat) and yeast mixture to the flour mix, and mix into a smooth dough. This usually takes about 5 minutes of mixing.

4. Turn the dough out onto a lightly-floured counter and knead for about 5 to 10 minutes—it should feel springy and little bubbles should form under the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let rise for about an hour until double in size.

5. Once risen, place the dough onto the counter and cut it into 4 pieces. One piece at a time, stretch it into a long rope about an inch to an inch and a half wide. Cut strips about an inch long, ball em up with your hands, and place them on a baking tray or wire rack to wait.

6. Cover the doughnuts holes with a cloth to rise while you heat the oil to 375F.

7. Place the doughnuts into the oil and fry until golden brown on each side, about 2 minutes. Be sure to fry only a few at a time so they don’t overcrowd and stick together.

8. Drain on a paper towel or wire rack over a cloth, before glazing them. Be sure to glaze them warm, or else they won’t get that delicious coverage!

Ingredients:

  • 1 cup diced dried apple
  • 3 teaspoons lemon juice
  • 2 tablespoons water
  • 1 cup sugar
  • 1 cup corn syrup
  • ¾ teaspoon cinnamon
  • 1½ cups creamy peanut butter
  • 5¼ cups Special K cereal

Instructions:

  1. Toss apples with lemon juice and water and set aside to rehydrate for 5 minutes. Then pat off excess liquid with a paper towel. Heat sugar, corn syrup and cinnamon in a large pan on medium high heat. Stir with a wooden spoon until mixture comes to a rolling boil. Turn off heat and stir in peanut butter. Add apples and cereal and mix until well coated. Drop by large blobs onto wax paper and shape into balls. After the the balls have set for a few minutes, place a stick down through the middle. Wait another 20-30 minutes before serving. Decorate with ribbons and/or wrap in cellophane, if giving as gifts. But save at least one for yourself!

Watermelon Cake

Summer is wrapping up & Watermelons are going on sale everywhere. Why not give this one a shot. I actually made it the other day and it was incredibly simple & delicious to boot!

Ingredients

Watermelon

Cool Whip

Greek Yogurt

Sliced Almonds

Fresh Fruit of your choice

Directions

1. Cut ends off watermelon creating a cylinder shape.

2. Cut skin off watermelon & level out ends.

3. Mix Cool Whip with 2 c. Greek Yogurt (I used Vanilla Greek Yogurt, and it was fabulous)

4. Frost the cake with Cool Whip/Yogurt Mixture. Be Generous.

5. Decorate sides with sliced almonds

6. Top with Fresh Fruit

Enjoy!
