Homemade Enchilada Sauce

My family loves Mexican food.  We recently experimented with homemade enchilada sauce and got amazing results.  It was full of flavor, not overly salty and was awesome because we were able to can the extras for later use!  It was also great because I made about 2 1/2 cups of it for just about .75 cents!

3 tablespoons vegetable oil
1 tablespoon flour
1/4 cup chili powder
2 cups chicken stock (homemade works great here too)
10 ounces tomato paste
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt (slightly more to taste)

How to Make:

  • In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon.
  • Cook for 1 minute.
  • Add chili powder and cook for 30 seconds.
  • Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes.
  • The sauce will thicken and smooth out. Adjust the seasonings. Serve atop your favorite enchiladas.

Easy Microwave Caramel Chews

If you are anything like me, you love to have a fun, tasty, “go to” treat that you like to make. If you like caramel these definitely need to go on your “to make” list. Give them a try. They are not to dissappoint. Only takes 15 minutes in the microwave, a little bit of cooling down and then you have made your very own delicious caramel treats. Enjoy!

Microwave Caramel

1 cup Margarine
1 cup White Sugar
1 cup Brown Sugar
1 cup Light Karo Syrup
1 can Sweetened Condensed Milk

Directions:
In a large microwave safe bowl melt the margarine for 1 1/2 minutes. Remove from the microwave and add the rest of the ingredients. Mix well. Put back into the microwave and cook on high for 5 minutes. Take the bowl from the microwave and stir well. Continue cooking on high for an additional 5 minutes, remove and stir. Cook for 3 more minutes ( for a total of 13 mins.) Remove from the microwave, stir and pour into a 9 x 13 pan to set. Once caramel has set wrap in wax paper and store in an air tight container.

Homemade BBQ Sauce for Less than .50 Cents

I love BBQ Chicken.  Chop it up on salads, make BBQ chicken sandwiches, make BBQ chicken Kebobs, make….okay you get the idea!  The other day on Pinterest, I ran across a recipe for Homemade BBQ sauce that tastes pretty much like the “Sweet Baby Rays” BBQ sauce.  The cool thing you can make it at home with stuff you might already have.

After making it, I realized how cheap it was to make.  Since I just grabbed a bunch of bottles of ketchup for a steal at Kmart….well this seemed like a sweet deal for all the BBQ-ing we will be doing.

Make this for less than .50 cents for a  8 1/2 ounce jar!

Fun 2B Frugal BBQ Sauce

Ingredients

  • 1 1/4 cups ketchup
  • 1 cup dark brown sugar
  • 1/4 cup molasses
  • 1/4 cup pineapple juice or you can sub apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon worchestire sauce
  • 2 1/2 teaspoons ground mustard
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon pepper
  • 1/8 cold water mixed with 1 tablespoon corn starch (optional)
  1. Combine all the ingredients together except the water and corn starch mixture in a medium size sauce pot. Bring to a boil and reduce and simmer for five minutes or until all the sugar has dissolved. If you like a thicker BBQ Sauce add the water and corn starch mixture. Simmer until desired thickness is reached, but watch closely. It thickens really fast! Serve immediately or cover and store in fridge.

You can store this is a bottle or in a canning jar.  It also make a awesome gift!

What to Do with all that Easter Candy Clearance Easter Candy

We found this week at Target, Kmart, Walmart and other stores Easter Candy was on Clearance for 30% to 70% off depending on the store!  Score!! Further your savings by searching for “candy” in our coupon database!

After some inspiration on Pinterest, I decided to go for some extra bags of Easter Chocolate and Peeps for the cupboard just for the purpose of making Peeps S’Mores.  It’s a fun low cost “special treat” for the kids (okay and me too).

If you are shopping the clearance bins, make sure you use the price scanner to double check the product price.  We have heard a few stores have only certain candy at the 70% off price and that it is often mixed with the candy that is only 30% or 50% off.

Here is how to make them up!

Grab some Graham Crackers, Peeps and Marshmallows.  Place a cracker on a cookie sheet.  Place a piece of chocolate on the graham cracker (any kind will do!  Chocolate bunnies, Hershey Mini candy bars, even peanut butter cups).  Then place a Peep on top.  Place in the oven at 250 degrees for about 3 minutes.  Then top with another graham cracker and enjoy!
