Chocolate Covered Brownie Ice Cream Sandwiches

Yep, you going to hate me for ever allowing you to lay eyes on this!  But what is a girl to do when she is craving chocolate and on Pinterest trying to stay awake!  I found these and wouldn’t you know I had a box of brownie mix that I had scored for just .50 cents using Ibotta and some lonely ice cream in the freezer just waiting to be used for these amazing creations of chocolate goodness.

All you need for this is a box of brownie mix, vanilla ice cream and some chocolate chips (about two bags) or chocolate melting wafers.  You could also make them with other flavors of ice cream too!

  • Bake your brownies by placing batter on a jelly roll pan or use baking dish that about double the size suggested by the directions.  You want these thin about 1/2 inch thick when baked.
  • Once you cool your brownies, cut them into squares. (they don’t have to be perfect-o if you know what I mean)
  • Take your ice cream out and let it sit for a few minutes to soften then spread on to brownie squares and top with a second brownie square to make a sandwich.  Insert the stick.  Place on a tray
  • Place completed sandwiches into the freezer for 30-40 minutes to freeze
  • Melt your chocolate.
  • Once your sandwiches are frozen, remove one at a time and cover in melted chocolate chips/melted chocolate.
  • Place back in the freezer to harden.  This will take an hour, maybe two.

There you have it…an amazing chocolate treat that no one is going to turn down!

Quick and Easy Ice Cream Sandwich Cake

This is a super fun way to create a fun cake that everyone will love.  Granted, it may not be the most artistic and pretty but boy does it taste good!  I scored both the ice cream sandwiches and the cool whip for this for just .99 cents each.  Totally a great deal!

I also like to keep this in the freezer (a.k.a the supplies) so if someone stops by, I have a quick and easy dessert to put together.

  • You need 12 ice cream sandwiches of any flavor
  • One tub of Cool Whip
  • Sprinkles (optional)

Stack up the ice cream sandwiches on a tray or plate.  You can also use a 9 x 9 baking pan and build it in there.  After stacking the cookies, place the cool whip on top and then spread over the ice crean sandwiches like frosting.

Freeze for 15-20 minutes and serve.  If you like to you can place sprinkles on the top before placing it in the freezer.

If you wish to make this ahead of time.  Place your ice cream cake in the freezer for 30 minutes then remove and place plastic wrap over it and return to freezer.

Patriotic Fruit and Pound Cake Trifle

This was one of the easiest desserts and I promise you, it looks like you spent hours!  All you need is fruit and a Sara Lee Pound Cake and Ready Whip (unless you want to make fresh whipped cream)

Ingrediants

  • One pound fresh strawberries, sliced
  • Two pints fresh blue berries
  • Two pints fresh raspberries (optional)
  • One Sara Lee Frozen Pound Cake
  • One star cookie cutter
  • Clear Glass serving bowl

Slice your pund cake into 1/2 inch thick slices.  using a cookie cutter, cut out star shapes.  If you have multiple sizes of star shapes even better!

Then begin to layer the star cake pieces, spoonfuls of whipped cream and the fruit.  I put the stars up against the glass so that you can see them.

This is also really cute served individually, in mason jars.  Keep cold until serving or the whipped cream will melt!

Cute Patriotic Chocolate Dipped Strawberries

We love these super cute patriotic strawberries!  These are really easy to make!  You just need to get the various colors in Chocolate melting  disks (you can find these at Michaels, Jo-Ann’s and even at some Kmart and Walmart Stores.

I prefer the Wilton Candy melts because they make the most consistent chocolate texture.  Here are some other pointers:

  • Chill your berries for about 30 minutes before dipping (wash and dry; then put in the fridge)
  • Warm your chocolate in small glass bowls 30 seconds at a time in the microwave
  • Let these cool and harden on cookie sheets lined with wax paper.  They will take about an hour to full harden if it is not warm inside your house.
  • Work on one “look” at a time.  That way you can clean up in between

Red, White and Blue Drinks for the Holiday

Here are a couple of great treats that will be a big hit for your Memorial Day Weekend!  Don’t you just love Pinterest for all the great ideas!!!???  They are really easy to make and really cute!

For your All- American Cooler just follow these directions.

  • Fill a cocktail glass with ice cubes (we froze blueberries inside ours).
  • Use a cocktail shaker to mix a handful of ice, 2 shots Stoli Blueberry vodka, 1 oz pomegranate juice, 1 tbsp fresh lemon juice and a splash of simple syrup.
  • Pour into a small tumbler.
  • Top with 1/4 oz Lucid Absinthe, then club soda, pouring both slowly over the back of a spoon. (The absinthe will slowly turn from clear to milky white.

Make any beverage festive with just a couple cute additions!

Make your drinks U.S.A. all the way by adding sliced star fruit, sliced strawberries and a handful of blueberries. Red, white and blue all the way
