Summer Watermelon Waffles

When I saw these, I could not resist making them for the kids!  These “Watermelon Waffles” are super cute and easy to make!

Just color some of the batter dark pink, some green and then pour them into waffle iron as you see above!   How cute is that!  I would love to do these for a summer brunch!  I am sure everyone would go wild for them!

Watermelon Milkshake

Watermelon-Milkshake

It’s summer time and what better way to relax than with a refreshing Watermelon Milkshake. You can find watermelons on sale at your local grocery store. So pick one up and make this amazing recipe you will be sure to enjoy.

Ingredients:

  • 1 1/2 cups diced watermelon
  • 2 1/4 cups milk
  • 2 teaspoons white sugar

Directions:

Process the watermelon and milk together in a blender until smooth. Add the sugar and blend another 10 seconds to incorporate. Serve immediately.

Yield:

4 servings

Hot Dog Sugar Cookies

When I stumbled across this picture in my Pinterest travels, I fell in love with it!  These would be so cute at a 4th of July BBQ or other summer BBQ!   All you need is a great sugar cookie recipe and a few other things and you are set and ready to go!  I am not sure who came up with this idea, (the Pins link back was not this recipe) so I came up with my own!

Sugar Cookie Recipe

I used a box dough for this because I was in a bit of a time crunch.  If you are looking to make them from scratch, a friend used a recipe from Betty Crocker and says that it was awesome to work with.  You will want to make one complete recipe, to get 12 cookies.  If you need more than 12, double your recipe.

What Else You Will Need

  • Red Food Coloring
  • Yellow Frosting (or color white frosting yellow)
  • Coconut (for onions)

How to assemble

  • Roll out 12 “buns” in an oval shape
  • Mix the red food coloring with the rest of the dough to make the hot dog
  • Roll out 12 hot dogs
  • Score each end of the hot dogs so that they look like they are sealed
  • Sit the hot dog in the bun, slightly press the sides up so that they surround the hot dog
  • Bake at the assigned temp and watch carefully for them to not get too brown
  • When you remove them from the oven, lightly sprinkle with “coconut” and set to cool

Once your hot dogs are done, place on a rack and cool.

When you hot dogs are cool pipe on a yellow squiggle for the mustard!  You are ready to serve them!

I know for me, I have so many things going on and when things are more practical it is just easier for me to manage!

Easy Dessert Nachos

I really like nachos….but I LOVE dessert nachos!  These are so easy and what is great about them is they can be frugal and quick to make.

For your “Chips” you will need to fry up some flour tortillas so that they are nice and crisp.  Then sprinkle cinnamon and sugar on them.

For your toppings you should choose a few from this list:

  • Whipped cream
  • Strawberries or any other fresh berry
  • Fresh Mint
  • Warmed Nutella
  • Warmed Peanut Butter
  • Warmed (like 10 seconda in the microwave) Jelly
  • Crushed candy
  • Dried Fruit

Then build your dessert just like you would nachos.  You won’t need to stick it in the oven again, just serve with a napkin and a glass of milk!  These are so fun!  My kids loved them!  It is a fun spin on a favorite snack!
