Recipe: Easy Jello Rainbow Cookies

Jello Cookies Recipe

These Jell-O rainbow cookies are such a hit with kids!  The cookie will take and become the flavor and color of the Jell-O you choose. Fun as a party snack and would be great for a party favor, too! Here is the super simple recipe.

Ingredients:

  • 3/4 c butter
  • 1/2 c sugar
  • pack of any flavor Jell-o or store brand gelatin
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 c flour
  • 1 tsp baking soda
  • 1 tsp salt

Directions:

  1. Preheat oven to 350° F.
  2. Mix together the butter, sugar, gelatin powder and eggs until creamy.
  3. Mix in rest of ingredients until fully blended.
  4. Roll dough into balls, place on a greased cookie sheet, and flatten balls with a fork.
  5.  Bake for 6-8 min and enjoy!

    Super easy! Super fun!. Who doesn’t like Jell-O? I always have Jell-O in my cupboard! I made these today & ate a dozen while I was baking them! Recipe made 4 dozen (depends on how big you want your cookies). I sprinkled a little sugar on top (like you do for peanut butter cookies). I will be using these for Easter! Thanks for giving us something different to make with Jell-o!
