Lucky Charms Chex Mix

I saw this picture floating around my Pinterest page and I said literally aloud in front of my kids, “Oh no!” What I mean by that is, “Oh, no. That looks so amazing and if I make it, then it won’t make it beyond a day in this house.” So, instead, here’s the recipe from Tablespoon for YOU ALL. Lucky you, and just in time for St. Patrick’s Day!

Ingredients:

  • 1 box (11.5 oz) Lucky Charms® cereal
  • 6 cups Rice Chex® or Corn Chex® cereal
  • 2 bags (12 oz each) white vanilla baking chips (4 cups)
  • 1/4 cup multicolored candy sprinkles

Directions:

  1. Pour box of Lucky Charms and pick out all the marshmallows (about 2 cups). DO NOT EAT THEM. Okay, you can eat a couple. But set aside the rest to add to the mix later. Measure 2 cups of the remaining Lucky Charms cereal (without the marshmallows) into large bowl, add Chex cereal.
  2. Line cookie sheet with foil or waxed paper. In medium microwavable bowl, microwave white vanilla baking chips uncovered on High about 2 minutes, stirring every 30 seconds, until chips can be stirred smooth. Pour over cereal mixture in large bowl; toss to evenly coat.
  3. Spread mixture in single layer on cookie sheet. Immediately sprinkle with candy sprinkles. Let stand until set, about 20 minutes. Gently break up mixture; toss in reserved marshmallows. Store in airtight container and should last about a month (yeah right!).

Recipe: Strawberry Shortcake Muffins

Strawberry Shortcake Muffins Recipe

Looking for something sweet, healthy, gluten-free, and taste like dessert? Strawberry Shortcake Muffins are easy to make and only take 30-35 minutes to make AND they’re only 2 Weight Watchers points each.

Ingredients: 

  • 2 1/2 cups old fashioned oats (not quick cooking)
  • 1 cup plain low fat Greek yogurt
  • 2 large eggs
  • 1/2 cup baking stevia (or other sweetener that measures similarly to sugar)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cup of strawberries
  • Optional: 1 tsp lemon juice and another 1/2 cup of strawberries (diced for the top of the muffins)

Note: Paper cupcake liners do NOT work with this recipe. Use either silicone muffin pans, silicone baking cups in a regular baking tin, or take apart the paper ones and just use the foil ones.

Directions:

  1. Preheat oven to 400 degrees. Line 12 muffin tins with liners (see italicized note above).
  2. Place all of the ingredients, except strawberries in a blender or food processor. Blend until oats are smooth.
  3. Pour mixture into a medium sized bowl then stir in strawberries. Divide remaining 1/2 cup diced strawberries over the top of each muffin. (This is optional,  but makes the muffins taste even more delicious!)
  4. Divide the batter among cupcake liners. Bake for 20-25 minutes or until toothpick comes out clean.

Recipe: Santa Strawberries

Make these adorable Santa Strawberries along with these Grinch Kabobs for a more nutritious snack for the kids this year!

Ingredients:

  • 1 dozen strawberries
  • 1 cup whipped cream
  • chocolate sprinkles

Directions:

  1. Slice the leafy end off each strawberry with a pairing knife so they stand up evenly. Then slice the tip off to make a little hat (isn’t it perfectly shaped for that?).
  2. With a spoon or icing tip, put 1-2 tsp of whipped cream on top of the strawberry base. Put on the hat and put a tiny tab of whipped cream at the very tip to look like the puff on the top of Santa’s hat.
  3. Put 2 chocolate sprinkles in the “face” to look like Santa’s eyes.
  4. Add 2 tiny tabs of whipped cream down the front of the strawberry base with a toothpick to look like buttons.
  5. If not eating immediately, cover and put in the fridge to keep from melting.

Recipe: Grinch Kabobs for Kids

Looking for a healthy treat for Christmas time instead of the usual cookies and other sweets? Here’s an adorable idea using fruit to make Grinch kabobs!

What You’ll Need:

  • Toothpicks
  • Green grapes
  • Sliced bananas
  • Sliced strawberry ends (to look like Santa’s hat)
  • Mini marshmallows

Directions:

  1. Stack toothpicks starting with a green grape (stem side through the toothpick), then a slice of a banana, the slice of a strawberry (pointy end last), then a mini marshmallow (looks like the puffy end of Santa’s hat).
  2. Eat fairly soon after or the bananas will go bad quickly!

Could you imagine having a Krispy Kreme donut at your fingertips? Well, now you can. Check out this recipe for Homemade Krispy Kreme donuts. Uh, oh. This could be dangerous. Warning: they are addicting! Turn your red “hot” light on, and get to making these scrumptious treats.

Homemade Krispy Kreme

Ingredients:

3 T milk

3 T boiling water

1 tsp dry active yeast

8oz all purpose flour (a little under 2 cups)

1 1/2 oz sugar (about 3 T)

1 egg

1 oz butter, cold to room temperature

dash of salt

Enough oil to cover the bottom few inches of a wok or deep fryer

Glaze

1/3 c butter

2 c powdered sugar

1 1/2 tsp vanilla

4 T hot water or as needed.

Directions: 

1. In a large measuring jug, combine the milk and boiling water. Add a teaspoon of the sugar and the yeast. Stir it gently, then leave it in a warm place for the yeast to activate (aka foam).

2. In a large mixing bowl, combine the flour, the rest of the sugar, and the salt. Cut in the butter using your fingers or a pastry blender, until it resembles crumbs.

3. Add the egg (give it a quick beat) and yeast mixture to the flour mix, and mix into a smooth dough. This usually takes about 5 minutes of mixing.

4. Turn the dough out onto a lightly-floured counter and knead for about 5 to 10 minutes—it should feel springy and little bubbles should form under the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let rise for about an hour until double in size.

5. Once risen, place the dough onto the counter and cut it into 4 pieces. One piece at a time, stretch it into a long rope about an inch to an inch and a half wide. Cut strips about an inch long, ball em up with your hands, and place them on a baking tray or wire rack to wait.

6. Cover the doughnuts holes with a cloth to rise while you heat the oil to 375F.

7. Place the doughnuts into the oil and fry until golden brown on each side, about 2 minutes. Be sure to fry only a few at a time so they don’t overcrowd and stick together.

8. Drain on a paper towel or wire rack over a cloth, before glazing them. Be sure to glaze them warm, or else they won’t get that delicious coverage!
