Recipe Tuesday: Crockpot Mexican Chicken
In this video I will show you how to make CrockPot Mexican Chicken. It’s VERY simple, you should know by now that’s the way I like it! I am only showing you how to make the chicken in this video. In the weeks to come I will show you what dishes to add it to. So, when I make this chicken, I use 1/3 of it for dinner, and then freeze the other 2/3 for later dinners. It’s a wonderful way to cut cooking time on future meals.
Crockpot Mexican Chicken
(1) Bag of frozen chicken 3-4 lbs. OR (2) Packages of fresh chicken
(2) Packages of Old El Paso Taco Seasoning
(2) Cans of Rotel Tomatoes w/ Green Chili
That’s it! Now, when we make the actual dish that this chicken goes in, we will use more ingredients. But for now, these ingredients are all you need! I listed some coupons below to help you grab the things you need for this dish.

I made this today. We put it over nachos. It was so yummy. It made so much from a small bag of chicken. I was shocked at how much was there. I have a nephew who is a very picky eater and doesn’t eat most things. He went back for seconds. Thank you so much for the wonderful recipe. I will be keeping it in my long day, but dinner is ready recipe file. We are trying the mac and cheese next.
