Whole Wheat Pancakes

Our family loves pancakes!  What better way than to make them a little more nutritious!  You can always add a few extras such as chocolate chips or blueberries.  We have a few blueberry bushes and I can’t wait to add them to the recipes this year!

Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons turbinado or sugar
  • 2 eggs, beaten
  • 2 cups buttermilk or milk
  • 1/4 cup oil or melted butter
  • 3 cups whole wheat flour

Directions

  1. Combine all the dry ingredients: flour, baking powder baking soda and sugar in a bowl. Mix the eggs, milk and oil/butter in a separate bowl.
  2. Add egg mixture to flour mixture and stir until just mixed.
  3. Cook on a greased non-stick or cast iron pan or griddle.
